Milk or cream

Sour cream
Options: garlic, parmesan cheese, bacon bits, green onion, butternut squash, cheddar
cheese, nutmeg, chipotle pepper
Hints: Steam or boil potatoes until a fork can easily pierce the center without resistance.
Drain thoroughly! Either heat the cream and butter in advance or add to the drained
potatoes while stove is still on. Mix while still very hot. Mixing cold potatoes makes
them gluey. If you only have skim milk, add more sour cream to increase creaminess.
Low-fat sour cream works fine. There is no substitute for real cream, butter and sour
cream when you are feeling indulgent. Mash as quickly as possible when all the hot
ingredients are combined. Salt and pepper to taste. Variation: boil a peeled butternut
squash with potatoes (less than 50%) and whip as usual. The flavor is great and can
introduce squash, in a sneaky way, to the kids. The texture is exactly the same as regular.
