Our tenant, Anna, makes this amazing borscht. I don't even like beets but I like this!
Ingredients
2 chunks of pork
3 beets
3 big potatoes
1 carrot
1/2 cabbage
1 onion
1/2 can of black beans
1/2 lime
1/2 lemon
1 can of tomato sauce
4 cloves of garlic
spices: salt, lemon pepper, curry powder, paprika powder, garlic powder, 4 bay leaves
Steps
1. In a small pot, bring meat to a boil. Drain the water and wash the meat. Cut it into small pieces and put in a large pot where the soup will be cooked. Salt the water.
2. Boil the beets in a separate pot for two hours or until soft (test with a fork). Peel and grate the beet.
3. In the big pot, when the meat is almost ready add cut potatoes and carrots.
4. Dice cabbage by constantly rolling. Add as desired ten minutes after potatoes and carrots.
5. Dice an onion, fry till golden, and add a half can of tomato sauce and fry a little Add juice from 1/2 of lime. When everything is ready, add grated beets, fried onions, and sauce and half can of black beans. Turn off heat.
6. Add four cloves of minced garlilc, spices, lemon and more sauce as desired.
