Teriyaki Sauce

Teriyaki Sauce

2 cups Kikkoman soy sauce
2 cups sugar
1 cup water
¼ cup fresh ginger, finely minced
1 tsp black pepper
1 tsp crushed red chili
¼ cup sesame oil
¼ cup green onion, thinly sliced
¼ cup sesame seeds

Combine all the ingredients into a large bowl and mix well until the sugar is dissolved,
about 5 minutes. Taste to make sure it’s not gritty. Store in a mason jar for up to 2
months in refrigerator.
This marinade works for beef, chicken and fish. I like to marinate beef short ribs or baby
back pork ribs 1 to 2 days in this marinade before barbecuing. Chicken needs at least 2
hours, but can be marinated overnight. Take care with fish, I like to marinate only about
an hour and use a little sauce to baste while cooking. Thicken the sauce with a touch of
cornstarch for a finishing glaze or to top sticky rice. Thickened sauce can also be used for
stir-fry.
