Ingredients:
1 1/3 cups flour
1 T cinnamon, divided
1 tsp cream of tartar
1/2 tsp baking soda
1/2 tsp fine sea salt
3/4 cup plus 2 T sugar, divided
1 stick butter, softened
1 egg
1 tsp vanilla extract
Whisk together the flour, half the cinnamon, cream of tartar, baking soda, and salt in a bowl. In the bowl of a stand mixer fitted with the paddle, beat 3/4 cups of the sugar with the butter over medium speed until fluffy, 2 minutes. Add half the flour mixture, then the egg and vanilla, then the remaining flour, beating for 30 seconds after each addition. Press plastic wrap into the surface of the dough and chill for 1 hour. Line a baking sheet with parchment. Preheat oven to 375. Toss the remaining cinnamon in the 2 T sugar in a bowl. Form 12 equal-sized balls of dough, roll them in the cinnamon sugar, and arrange them on the baking sheet, leaving 2-3 inches of space between each cookie. Bake until lightly browned, 8-10 minutes. Transfer to a rack and cool completely.
